How to: Get 3 Meals Out of 1 Beef Roast

Cook 1 Chuck Roast, Feed your family THREE different meals!


How Do I Cook a Beef Roast?

This is one of the more common questions I get, and am so happy to answer. Because I myself, didn't always know what to do with my Beef Roasts, but I learned and you can too! Let me help ya:)


If you have only been enjoying ground beef, and steaks I want to encourage you to try a ROAST! Not only is it easy to stretch, but what a budget, valueable cut. 3 meals, 1 roast, I like it ;)


You'll finally be able to relax as you shuttle your kids around to afterschool activities, because you've got a 3-4 lb roast cooking and 2 more meals planned for dinner this week, Halleulujah!

  • Beef Roast Meal #1 Beef Roast, Vegetables, & Mashed Potatoes

  • Beef Roast Meal #2 French Dip Sandwiches

  • Beef Roast Meal #3 Shredded Beef Tex Mex Salad






Dinner #1 Juicy Beef Roast over Mashed Potatoes

  • Weiler Beef Chuck Roast 3-3½ lbs

  • Salt generously [Can use table salt, seasoning salt, your preference]

  • Pepper generously

  • Can use any other favorite seasonings Garlic powder, Onion powder, etc.

  • 12 oz. Can of Beer

  • Celery 2-3 stalks

  • Carrots 1-2

  • 12 whole garlic cloves or I use minced garlic

  • 1/2 cup Onion sliced

  • Herbs: Try Rosemary, Thyme, or Parsley measure with your heart;)


Step 1: Brown your roast

Rub Chuck roast with oil and seasonings, and sear it first in a skillet. This really locks in the seasons and creates a nice flavorful crust.


Step 2: Add to Slow Cooker

After you've seared the Chuck Roast, place in slow cooker. Add remaining ingredients.


Step 2: Add to Slow Cooker

Cook low and slow for 8 hours. When done, shred Chuck Roast with forks and serve with vegetable over mashed potatoes.

Tip: Don't discard juices/broth roast was cooked in, save for tomorrow's dinner


Dinner #2 French Dip Sandwiches

  • Previously cooked Chuck Roast and Juices

  • Hoagie style buns

  • Provolone cheese, sliced

  • Grilled Onions, if you choose

  • 2 tbsp Worcestershire sauce

  • 2 tbsp Soy Sauce

  • Horseradish sauce [I like mild]


Step 1: Reheat the Meat

Add Worcestershire and soy sauce to Chuck Roast & Juices/Broth. Bring all to a simmer on stove top. Remove from heat and prep your hoagie bun.


Step 2: Butter your bread

You can butter your bread and heat the bun. Then spread a little horseradish on the bun and add your shredded beef, a slice of Provolone cheese, and grilled onions. And Bam, dinner #2!



Dinner #3 Shredded Beef Tex-Mex Salad

  • 2-3 Cups Leftover Shredded Beef Roast with Juices

  • 1 tbsp taco seasoning, up to double, to taste

  • 1 cup Ranch Dressing

  • ⅓ cup salsa

  • Salad greens, and your favorite salad toppers


Step 1

Put the beef in a large skillet with 1 tbsp of taco seasoning. Cook over medium-high heat until beef is heated through. Taste, and add more taco seasoning if you like.


Step 2

Combine ranch dressing and salsa


Step 3

Spoon some shredded beef over a bed of salad and top with your favorite toppings and a drizzle of Mexi-Ranch.
