Brisket.....If you've had great brisket and weren't sure if you could deliver the same, TRY THIS😋 (Recipe Below)


I was super intimidated to cook my 1st brisket.


Last year, I took a small brisket to 4th of July, because it was my first time bbqing one. I just wanted to dip my toes in. 


I've had some great brisket from other places, so my expectation was high. 


I cooked it on the smoker all day, and DANG it turned out good!


So this year, I'm gonna bbq our biggest brisket we have, a 12 pounder!


I've found a good rule of thumb, 1 hour of cooking/ 1 lb of brisket. 


All good things are worth the wait, right?!


You're probably thinking, 12 hours! I don't want to babysit the smoker for 12 hours.


We also have different sizes of 4-5 lbs which is only 4-5 hours of cooking time:)


Rest assured, I 've already done the trial run for you.


Here's What I Did:

  • I took out the brisket about 30 min before I wanted to put on the grill, applied the rub, set the smoker to 225°F then let the smoker do its thing.


TIP:If you want a little insurance, like I did, at 3 hours in you can take it off the grill and wrap it in foil to help

keep its moisture.


  • I literally went on with my day as normal. Every once in awhile and I mean like every 4 hours, I'd make sure the pellets were still good, that was it.


  • Depending how you'd like to serve it; sliced or shredded will determine when to take it off.

Sliced brisket needs removed at 10½ hours or 195°F (For a 12 lb brisket)

Shredded brisket for tacos or sandwiches needs removed at 12 hours or 205°F.


  • When taking it off make sure to let it rest for at least 10 minutes, 20 would be best. This lets the juices redistribute and gets you that juicy brisket, YUM😍



Last time I made one, I cooked an 8 pounder just for our family, thinking it'd give me a leg up on meal prep and lunches, you guys I barely had enough leftover for Johnny's lunch the next day!


My only regret.... I didn't cook a bigger one.
