This is a custom order specific to you.  Order your steaks cut to desired thickness, greater or lesser amount of hamburger and/or roasts.

    OUR RATES: $4.00/lb with $150 Deposit to reserve your beef.

     

    *CUT & WRAP to be paid separately by customer to meat shop at time of pick up.  Cut & Wrap prices are specific to each meat shop and average to be $1.00/LB

     

    Farm-direct beef is purchased based on the hanging weight of $4.00/lb + Cut & Wrap*. 

     

    Hanging weight is the weight of the carcass which your custom processor hangs in the walk-in freezer for the dry-aging period.  This is the last time the beef is weighed.  This allows for accurate pricing.

     

    Once the carcass has been aged the custom processor cuts the sides of beef into steaks, roasts, stew meat, and ground beef.  Next, the meat is wrapped for flash freezing.  Although every beef is unique, in general, the amount of frozen, wrapped, freezer-ready beef is approximately 62% of the hanging weight.
